It's been a while since I shared some Pinterest recipes. Yes, I have still been making food for my family. I just had to pause this series for well...Life. I'm back with a few new meals that I've made that maybe you should try for yourself. As a reminder, I try to make foods that are healthy but sometimes I just follow the recipe given. If I do tweak something, I will let you know. If I don't like a recipe; I will also let you know!
1. Pizza Tot Casserole - Different but good
When I made this meal, I needed to feed a couple teenage boys. I think pizza sometimes is made too often for a lot of people but so many people love it too. When I saw this recipe, I thought it would be a good version of pizza but not pizza. I hope that made sense. Also, I was looking for a casserole that I could put in the oven so I wouldn't be standing over the stove for an hour. You could easily make the ground meat up ahead of time too. For the ingredients, I always chose turkey pepperoni. It's less greasy which I prefer. Nobody has ever noticed a difference. I also try to find tator tots with the fewest ingredients. I know you'd think it would just say potatoes on the packaging, but it doesn't. Everybody did like it so it will stay in a rotation for feeding a large group.

This was such an easy meal to make. I actually didn't make any substitutions to this recipe at all! You could easily add some rice with it if you needed to. Also, this makes a great recipe for a meal prep and eat for lunches. It can freeze really well too. Have you tried freezing in those divided silicone containers? They have some that fit one cup. This recipe would be perfect for that. If you'd like a little soupier consistency, you could definitely add a cup of water to it.

This recipe didn't look exactly like the picture when it was finished but it was still very good. Also, it was great reheated the next day. I did use chicken sausage instead of pork sausage/kielbasa. I have had a hard time lately finding kielbasa at the local grocery stores that don't have high fructose corn syrup. That one ingredient makes me not buy products. So, I've been getting chicken sausage instead. One way to boost the nutrition in this recipe even more is to use chicken bone broth instead of water when you make the rice. I love doing that. It gives the rice a little more flavor but also all those yummy nutrients.
