I've been trying to use up some ingredients we have in the pantry and freezers, so I haven't been doing as many Pinterest meals the last few weeks. I will tell you one thing though; Pinterest is really handy when you have a particular thing you're searching for. I literally typed in the search to find a recipe to feed a bunch of teenagers. Sure enough, I got one that worked perfectly. I fed 3 18-21 year olds and my husband (plus me). AND we had leftovers! I actually did this two times in a week. 

 

1. Chicken & Bacon Alfredo Casserole - Feeds a crowd!

This is actually a Whole 30 recipe. There are no noodles. You use frozen potatoes instead of noodles. I will admit that I didn't follow the dairy free recipe completely. I couldn't find the Primal Kitchen Alfredo in the grocery store that I went to, so I just got a regular Alfredo sauce. When I make this again, I'll use two jars. I also did 2 pounds of shredded chicken instead of one pound. But this recipe was gobbled up by all the boys that were here, myself and my husband. I also had enough for lunch the next day for me!

2. Healthy Meal Prep Breakfast Bowls - Kinda Spicey
I like having easy meals for lunch while I'm at home. If I don't have something easy to heat up then, I end up eating something I shouldn't. I found this recipe and thought it would be perfect. It actually called for eggs too, but I don't cook those ahead of time. I don't have a microwave, so I just cook the eggs when I need them. I will tell you one thing.....It's SPICEY! I don't care for spicey food, and this is spicey. I ended up adding cheese to it to calm it down a little bit. Just beware if you make this. It was good though, just spicey.
3. Super Easy Mexican Beef and Rice Skillet - Crowd pleaser
This recipe was perfect for a total of 5 adults with leftovers. I had about 1.3 lbs of venison that I used. I also added an extra bell pepper and 2 cups of bone broth instead of 1.5 cups. That's all that I tweaked this one. We also had a fresh avocado cut up with tortilla chips. It was a great meal and there's enough for Jeff and I to eat for dinner one night this week!
I did make some chili one day from leftover ground venison, but I didn't write it down. I just threw in ingredients. We also had homemade pizza with sourdough crust. What do you think of the meals? Have you tried any yet? Let me know!
