Molasses is a natural byproduct of sugarcane processing — the thick, dark syrup that’s left behind after sugar crystals are removed. Instead of being tossed aside, it became a staple in early homestead kitchens because it was affordable, shelf-stable, and nutrient-rich.

It’s what gives old-fashioned gingerbread, baked beans, and cookies their deep color and unmistakable flavor.
